Homemade Lara Bars

I spotted a big ole tub of dates at Costco this weekend (way cheaper than my favorite little produce store sells them for) and was inspired to whip up homemade Lara Bars. Margeaux and I have been making these since this summer but took a break from them for a few months.

The recipe I use is from Camilla over at Enlightened Cooking. These are super easy to make, healthy and yummmmy! I haven’t tried any of the variations she lists on her website yet and we rarely measure out anything – just make sure there is slightly more nuts mixture in comparison to the dates mixture.

Lara Bars from Enlightened Cooking blog

  • 1/4 cup chopped dates (roughly chopped whole dates, not pre-chopped)
  • 1/4 cup dried cherries or dried cranberries
  • 1/3 cup whole pecans, almonds or walnuts
  • 1/8 teaspoon cinnamon

Margeaux helped by measuring, running away during the noisy grinding and then taste testing. So yummy!
